Roasted Pumpkin Soup with Smoky Bacon

Ingredients
- 3 pound sugar pie pumpkin
- 6 slices bacon diced
- 1/2 cup yellow onion chopped
- 2 carrots peeled and chopped
- 1 teaspoon minced garlic
- 1/4 teaspoon dried thyme
- salt and black pepper to taste
- 4 cups chicken broth (or vegetable broth for vegetarian)
- 3/4 cup heavy cream (or full-fat coconut milk for vegan)
- 1/4 cup pumpkin seeds (pepitas), toasted
- 2 tablespoons fresh chopped parsley for garnish
- cooking spray

Preheat your oven to 400°F (200°C). Carefully cut the stem end off the pumpkin to create a stable base.

Cut the pumpkin in half lengthwise. Using a large spoon, scoop out all the seeds and fibrous strands. Place the pumpkin halves, cut side down, on a sheet pan lightly coated with cooking spray.

Roast the pumpkin for 35-40 minutes, or until the flesh is very soft and easily pierced with a fork. This step enhances the pumpkin’s natural sweetness and depth.

While the pumpkin roasts, cook the diced bacon in a large, heavy-bottomed pot or Dutch oven over medium heat for 5-6 minutes, until it’s crispy and browned.

Remove the crispy bacon from the pot using a slotted spoon and set it aside on a paper towel-lined plate. Drain most of the bacon grease from the pot, leaving approximately 1 tablespoon behind for flavor.

Add the chopped onion and carrots to the pot with the reserved bacon fat. Cook for 5-7 minutes, stirring occasionally, until the onions have softened and become translucent. Stir in the minced garlic and dried thyme, then season with salt and black pepper to taste. Cook for an additional 30 seconds until fragrant.

Once the roasted pumpkin is ready, carefully scoop out its tender flesh and add it to the pot with the sautéed vegetables.

Pour the chicken broth into the pot. Bring the mixture to a gentle simmer over medium heat.

Let the soup simmer for 10-15 minutes, ensuring the vegetables are very tender and the flavors have fully melded. Remove from heat and stir in the heavy cream until well combined.

Use an immersion blender directly in the pot, or carefully transfer the soup in batches to a traditional blender (remembering to vent the lid), and puree until the soup is completely smooth and creamy. Taste and add more salt and pepper if needed.

Ladle the hot soup into bowls. Top generously with the reserved crispy bacon, toasted pumpkin seeds (pepitas), and fresh chopped parsley. Serve immediately and enjoy!

- This soup achieves its best flavor and texture with a fresh sugar pie pumpkin, which is inherently sweet and rich in pumpkin flavor. Avoid using large, stringy jack-o-lantern style pumpkins.
- To make this soup vegetarian, simply omit the bacon and substitute chicken broth with a good quality vegetable broth. For a vegan version, also replace heavy cream with full-fat coconut milk.
- Pumpkin soup can be stored fresh in an airtight container in the refrigerator for up to 3 days. For longer preservation, it freezes well for up to 2 months. Thaw overnight in the refrigerator before reheating gently on the stovetop.
