This cucumber dill salad features fresh sliced cucumbers, red onions, and plenty of dill, all tossed together in a zesty homemade dressing. A super easy side dish perfect for those hot summer days!

Ingredients

  • 1 pound cucumbers, thinly sliced (English cucumbers preferred for thin skins and soft seeds)
  • 2 teaspoons granulated sugar
  • 1 1/2 teaspoons kosher salt
  • 1/2 cup red onion, very thinly sliced
  • 1/4 cup fresh dill, coarsely chopped
  • 2 tablespoons apple cider vinegar
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Place the thinly sliced cucumbers in a large bowl. Add the granulated sugar and kosher salt, then toss to combine thoroughly. Let the cucumbers sit for 5-7 minutes to allow excess liquid to be drawn out.
  2. Carefully drain off any excess liquid from the cucumbers. This step is crucial for preventing a watery salad.
  3. Add the very thinly sliced red onion and the coarsely chopped fresh dill to the bowl with the drained cucumbers.
  4. In a separate small bowl, whisk together the apple cider vinegar, black pepper, and olive oil until well combined and slightly emulsified.
  5. Pour the prepared dressing over the cucumber mixture. Gently mix everything until all the vegetables and herbs are evenly coated.
  6. Allow the salad to sit for at least 10 minutes before serving. This resting period enhances the flavors. Serve immediately for optimal crispness, or refrigerate for later enjoyment.

Notes

  1. For the best texture and taste, I recommend using English or Persian cucumbers as their skins are thin and seeds are soft. If using standard waxy cucumbers, it’s best to peel them and scoop out the seeds to avoid bitterness and excessive water.
