Broccoli Casserole Ingredients
Crafting this delightful broccoli and cheese casserole requires a selection of fresh, high-quality ingredients that come together to create its signature flavor and texture. You will need:
- Broccoli: Fresh broccoli florets are preferred for their vibrant color and crisp-tender texture when blanched.
- Onion: Finely diced onion provides an aromatic base for the homemade cheese sauce, adding depth without overpowering the other flavors.
- Butter: Essential for sautéing the onion and creating the roux, which forms the foundation of our creamy sauce.
- All-Purpose Flour: Used in conjunction with butter to create a roux, thickening the sauce to a perfect consistency.
- Milk: Whole milk is recommended for the richest, creamiest sauce, but 2% milk can be used for a slightly lighter option without sacrificing too much flavor.
- Cheddar Cheese: Shredded sharp cheddar cheese delivers a robust, tangy flavor that is characteristic of classic broccoli cheese casserole. Divided use ensures cheesy goodness throughout and a golden crust on top.
- Cream Cheese: A small amount of cream cheese adds an extra layer of velvety smoothness and richness to the sauce, making it incredibly luscious.
- Seasonings: Salt, black pepper, smoked paprika, and garlic powder are carefully selected to enhance the savory notes of the broccoli and cheese, with smoked paprika adding a wonderful, subtle depth.
- Buttery Crackers: Crushed buttery crackers, such as Ritz, provide a wonderfully crunchy, savory topping that contrasts beautifully with the creamy interior.
- Fresh Parsley: Chopped fresh parsley serves as a vibrant garnish, adding a touch of freshness and color before serving.
- Cooking Spray: For preparing your baking dish, ensuring an easy release and cleanup.

How Do You Make Broccoli Casserole?
Creating this irresistible homemade broccoli casserole is a straightforward process that yields incredibly delicious results. Here’s a detailed guide to walk you through each step:
- Prepare the Broccoli: Begin with fresh broccoli florets. Bring a large pot of generously salted water to a rolling boil. Add the broccoli florets and cook for just 2-3 minutes, or until they turn a vibrant bright green and are crisp-tender. Immediately transfer the blanched broccoli to a large bowl filled with ice water. This crucial step, known as blanching, stops the cooking process and locks in the broccoli’s color and texture. Once cooled, drain the broccoli thoroughly and pat it very dry with paper towels to prevent a watery casserole.
- Sauté Aromatics: While the broccoli cools, preheat your oven to 375 degrees F (190 degrees C) and coat a 2-quart baking dish with cooking spray. In a medium saucepan, melt the butter over medium heat. Add the finely diced onion and cook, stirring occasionally, for 3-4 minutes until it becomes translucent and softened. Avoid browning the onion.
- Create the Roux: Sprinkle the all-purpose flour over the cooked onions in the pot. Stir continuously for about 1 minute, allowing the flour to cook out its raw taste and form a paste with the butter and onions. This is your roux, the thickening agent for the sauce.
- Whisk in Milk and Thicken: Gradually and slowly whisk the milk into the pan, ensuring no lumps form. Continue to cook over medium heat, stirring occasionally, for 4-5 minutes. The sauce will gradually thicken to a creamy consistency, enough to coat the back of a spoon.
- Form the Cheese Sauce: Reduce the heat to low. Add the cubed cream cheese, 2 cups of the shredded cheddar cheese, salt, black pepper, smoked paprika, and garlic powder to the pot. Stir constantly until all the cheeses are completely melted and the sauce is wonderfully smooth and velvety. Taste and adjust seasonings if necessary.
- Combine Broccoli and Sauce: Place your blanched and dried broccoli in a large mixing bowl. Pour the freshly made, rich cheese sauce over the broccoli. Gently toss everything together until the broccoli florets are completely and evenly coated in the luscious sauce.
- Assemble and Top the Casserole: Transfer the broccoli and cheese mixture into your prepared 2-quart baking dish, spreading it evenly. Sprinkle the remaining 1 cup of shredded cheddar cheese over the top, followed by the crushed buttery crackers. The crackers will bake into a golden, crispy crust.
- Bake to Perfection: Bake the casserole in the preheated oven for 20-30 minutes, or until the casserole is bubbling around the edges and the cheese topping is melted and beautifully golden brown.
- Garnish and Serve: Once baked, remove the casserole from the oven. Sprinkle a little fresh chopped parsley over the top for a burst of color and fresh flavor. Serve hot and enjoy the incredibly crunchy, creamy, and utterly irresistible result!

Expert Tips for the Best Broccoli Casserole
Achieving the perfect broccoli cheese casserole is simple with a few key techniques and considerations:
- Choose Fresh Broccoli: While frozen broccoli can be used, this casserole truly shines with fresh broccoli that has been lightly blanched. Fresh broccoli offers superior texture and flavor.
- Handle Frozen Broccoli Properly: If you must use frozen broccoli in a pinch, ensure it is completely thawed and very thoroughly drained and patted dry. Excess moisture from frozen broccoli will lead to a watery, unappealing casserole. Squeeze out as much liquid as possible after thawing.
- Perfect Bite-Sized Florets: Always cut your broccoli into bite-sized pieces. This ensures even cooking, makes the casserole easier to eat, and allows the creamy cheese sauce to coat every piece perfectly.
- The Secret to a Luscious Sauce: Our recipe utilizes a classic butter and flour roux as the base for the cheese sauce. This method creates a rich, smooth, and flavorful sauce from scratch, meaning you won’t need any canned cream of mushroom soup or cream of chicken soup. The homemade approach truly elevates the dish.
- Cheese Choices Matter: While sharp cheddar is a fantastic choice for its bold flavor, don’t hesitate to experiment with other cheeses. Monterey Jack, Gruyere, Fontina, or even a blend of cheeses can add delightful variations to the overall taste and creaminess.
- Crunchy Topping Alternatives: Typically, I reach for Ritz cracker crumbs due to their buttery flavor and perfect crunch. However, feel free to substitute with other similar buttery crackers, panko breadcrumbs for a lighter crisp, or even crushed cornflakes for a slightly different texture.
- Prevent a Watery Casserole: This is a common pitfall. The two main culprits are under-drained broccoli and an improperly thickened sauce. Make sure your blanched broccoli is very dry before mixing with the sauce, and ensure your roux-based sauce has thickened sufficiently to coat a spoon before adding the cheese.
- Season to Taste: Don’t be afraid to adjust the seasonings. A little extra salt, pepper, or a pinch more smoked paprika can truly enhance the casserole’s overall flavor profile.
Quick Tip
Ensure your broccoli florets are cut into uniform, bite-sized pieces for even cooking and a more enjoyable eating experience. This also allows for better sauce distribution.

Make-Ahead & Storage
One of the fantastic advantages of this broccoli casserole with homemade cheese sauce is its make-ahead potential, making it ideal for busy weeknights or stress-free holiday entertaining:
- Make-Ahead Instructions: You can assemble this casserole up to 24 hours in advance. Prepare the casserole through the step of pouring the broccoli and cheese mixture into the baking dish and sprinkling the initial layer of shredded cheese over the top. Do NOT add the crushed cracker topping at this stage, as it can get soggy when refrigerated. Cover the dish tightly with aluminum foil and refrigerate. When ready to bake, remove from the fridge, add the cracker topping, and bake as directed, adding an additional 10-15 minutes to the baking time to ensure it heats through completely.
- Storage of Leftovers: Any leftover broccoli casserole can be stored in an airtight container in the refrigerator for up to 3-4 days.
- Reheating: To reheat, individual portions can be warmed in the microwave until hot. For larger portions, cover loosely with foil and reheat in an oven preheated to 300°F (150°C) until warmed through, about 15-20 minutes. The topping may lose some of its crispness, but the flavor will still be delicious.
- Freezing Instructions: While best fresh, this casserole can also be frozen. Assemble the casserole as above, without the cracker topping. Cover tightly with plastic wrap, then with aluminum foil. Freeze for up to 2-3 months. To bake from frozen, remove the plastic wrap and foil, add the cracker topping, and bake at 350°F (175°C) for 45-60 minutes, or until bubbly and heated through. You might need to cover it with foil for part of the baking to prevent the topping from over-browning.
Recipe FAQs
Blanched broccoli is simply broccoli that’s been quickly boiled, then transferred to an ice bath to stop the cooking process. You’ll need to cook your broccoli for 2-3 minutes in vigorously boiling, salted water until it turns bright green. Immediately transfer the broccoli to a bowl of ice water. After the broccoli cools completely, drain the water and pat the broccoli very dry with a paper towel. This method ensures a crisp-tender texture and vibrant color.
Yes, this casserole is excellent for making ahead! Simply assemble the casserole up to the point of sprinkling the cheese on top. Cover the dish tightly with foil and refrigerate for up to 24 hours. Add the crushed crackers just before you bake the casserole to ensure they remain crisp. When baking from chilled, add an additional 10-15 minutes to the bake time, or until it’s fully heated and bubbly.
For the absolute best results, a broccoli casserole made with lightly cooked or blanched fresh broccoli is preferred. Fresh broccoli holds its texture better and tends to be less watery. However, frozen broccoli will work if properly prepared. If using frozen, make sure to thaw it completely and pat it thoroughly dry before adding it to the casserole. Wet broccoli can release excess water during baking, resulting in a runny, watery casserole.
Properly stored in an airtight container, leftover broccoli casserole will last for 3-4 days in the refrigerator. Ensure it cools completely before storing.
You can certainly opt for low-fat milk and cheese. However, keep in mind that using lower-fat dairy products may slightly alter the texture and richness of the cheese sauce. It might not be as thick or as creamy as when using full-fat ingredients, but it will still be delicious.
