  • 2 1/2 pounds party style chicken wings (or whole chicken wings halved crosswise)
  • ¼ cup kosher salt
  • 3 tablespoons honey
  • 3 garlic cloves, smashed
  • 1 tablespoon of barbecue, poultry, or grill seasoning
  • 8 cups water
  • Cooking spray
  • Cilantro leaves and lemon wedges for garnish (Optional)

For the barbecue sauce:

  • 1 cup Dr Pepper (regular preferred, but Diet will work)
  • 1 cup ketchup
  • 3 tablespoons Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 3 tablespoons of steak sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Bring one cup of water to a boil (microwave works well) and pour it into a very large bowl. Add the kosher salt and honey to the hot water, stirring until the salt has completely dissolved.
  2. Add the smashed garlic cloves and your chosen seasoning to the bowl. Pour 7 cups of very cold water over the mixture and stir until all ingredients are well combined.
  3. Carefully place the chicken wings into the brine mixture. Ensure all wings are submerged. Cover the bowl and refrigerate for at least 2 hours, but no more than 8 hours, to allow the flavors to penetrate and the skin to prepare for crisping.
  4. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with aluminum foil for easier cleanup, and then spray it generously with cooking spray to prevent sticking.
  5. Remove the chicken wings from the brine and pat them thoroughly dry with paper towels. This step is crucial for achieving crispy skin. Arrange the dried wings in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  6. Bake the wings for 40-45 minutes, or until they are a deep golden brown and the skin is visibly crispy. Flip them halfway through baking for even browning.
