Brussels Sprout Salad Ingredients

Crafting this vibrant Brussels sprout salad requires a selection of fresh, high-quality ingredients for both the salad base and its flavorful dressing. For the salad itself, you’ll need crisp raw Brussels sprouts, a sweet and tart apple, creamy feta cheese, crunchy pecans, vibrant pomegranate arils, and savory cooked bacon. The homemade dressing is a simple yet elegant concoction featuring minced shallot, robust extra virgin olive oil, tangy red wine vinegar, sharp Dijon mustard, sweet honey, and a touch of salt and black pepper to taste. Below are more details to guide your ingredient selection:

  • Brussels Sprouts: When selecting Brussels sprouts, opt for those with vibrant green leaves that are tightly packed and firm. Larger sprouts tend to be easier to shred, but any size will work. Avoid any sprouts that show signs of significant dark spots, yellowing, or excessive damage, as these may indicate they are past their prime.
  • Apples: The choice of apple can significantly impact the salad’s flavor and color. While any favorite apple will do, I personally love using red or pink varieties such as Pink Lady, Gala, or Fuji for their beautiful color contrast and balanced sweetness. These varieties hold their crisp texture well even after being diced.
  • Pomegranate Seeds (Arils): Pomegranate arils add a burst of juicy sweetness and tartness, along with a beautiful crimson hue. You have the option to deseed a whole pomegranate yourself (which can be a fun, albeit slightly messy, process) or, for convenience, purchase pre-packaged containers of pomegranate arils available in the produce section of most supermarkets.
  • Feta Cheese: For the best flavor and texture, I recommend choosing a block of feta cheese. This allows you to crumble it yourself, either with a knife or by hand, resulting in fresher-tasting, more irregular pieces compared to pre-crumbled varieties, which sometimes contain anti-caking agents that can affect flavor and texture.
  • Bacon: Crispy, diced bacon introduces a crucial salty and savory element. Prepare it by cutting raw bacon strips into small squares using cooking shears or a knife, then cooking them in a pan over medium heat until perfectly crispy. Drain excess fat on a paper towel-lined plate before adding to the salad.
  • Dressing Essentials:
    • Shallot: Provides a milder, sweeter onion flavor than traditional onions, adding depth to the dressing.
    • Extra Virgin Olive Oil: The base of our vinaigrette, choose a good quality oil for the best flavor.
    • Red Wine Vinegar: Offers a bright, tangy acidity that balances the richness of the other ingredients.
    • Dijon Mustard: Acts as an emulsifier, helping the dressing come together smoothly, and adds a subtle piquant note.
    • Honey: Introduces a touch of natural sweetness, perfectly complementing the savory elements and tart pomegranate.
    • Salt and Black Pepper: Essential for seasoning, adjust to your personal preference.

The Art of Shredding Brussels Sprouts

The key to a successful raw Brussels sprout salad lies in how the sprouts are prepared. Shredding them thinly is crucial for a pleasant texture, transforming them from dense mini-cabbages into delicate, leafy ribbons. Here’s how to master the technique:

  • Preparation: Begin by washing your Brussels sprouts thoroughly under cold water. Gently pat them dry with a clean kitchen towel or paper towels. Remove any outer leaves that appear damaged, bruised, or discolored. Trim a small amount off the tough root end of each sprout.
  • Halving: Cut each Brussels sprout in half lengthwise through the stem. This provides a stable flat surface for the next step and makes them easier to handle.
  • Shredding with a Knife: Place a halved sprout flat-side down on your cutting board. Using a sharp chef’s knife, thinly slice the sprout crosswise into fine ribbons. Aim for slices as thin as possible, almost like coleslaw. Continue this process for all the sprouts.
  • Using a Mandoline: For perfectly uniform and paper-thin shreds, a mandoline slicer is an excellent tool. Exercise extreme caution when using a mandoline; always use the safety guard to protect your fingers. Set the mandoline to a very thin slice setting and carefully glide the Brussels sprout halves across the blade.
  • Food Processor Method: If you’re preparing a larger batch or prefer a quicker method, a food processor with a slicing disc attachment can make quick work of shredding. Halve the sprouts and feed them through the chute. Be careful not to over-process, as you want shreds, not a paste.
  • Pre-shredded Option: Many grocery stores now offer pre-shredded Brussels sprouts in their produce section. This is a convenient option if you’re short on time, but always check for freshness.

Once shredded, these delicate ribbons form the perfect crunchy base for your magnificent salad.

How Do You Make Brussels Sprouts Salad?

Assembling this incredibly flavorful Brussels sprouts salad is straightforward and comes together quickly, making it an ideal choice for both weeknight meals and holiday entertaining. Follow these simple steps to create a show-stopping dish:

  1. Prepare the Brussels Sprouts: Start by thoroughly washing your Brussels sprouts and gently patting them dry. Discard any outer leaves that are brown or damaged, then trim a small portion from the stem end. Next, cut each sprout in half lengthwise. Using a sharp knife, a mandoline, or a food processor with a slicing attachment, thinly shred the halved sprouts into delicate ribbons. Place these shredded sprouts into a large mixing bowl.
  2. Add the Salad Components: To the bowl with the shredded Brussels sprouts, add the remaining salad ingredients: the crisp diced apples, the richly crumbled feta cheese, the crunchy pecans, the glistening pomegranate arils, and the savory cooked and diced bacon.
  3. Prepare the Dressing: In a small jar with a tight-fitting lid, combine all the dressing ingredients: minced shallot, extra virgin olive oil, red wine vinegar, Dijon mustard, honey, and a pinch of salt and black pepper. Secure the lid tightly and shake vigorously until all ingredients are well combined and the dressing is emulsified. Alternatively, you can whisk the dressing ingredients together in a small bowl until smooth.
  4. Combine and Serve: Pour the freshly prepared dressing generously over the Brussels sprouts mixture in the large bowl. Using salad tongs or your hands, gently toss all the ingredients together, ensuring that every shred of sprout and every topping is thoroughly coated with the delicious dressing. Serve immediately and savor the delightful combination of flavors and textures.

This simple process yields a salad that is not only visually appealing but also bursting with a perfect balance of sweet, savory, and tangy notes.

Tips For The Perfect Salad

  • To significantly cut down on your meal prep time, consider purchasing high-quality, pre-cooked bacon. Simply warm it slightly and crumble it, or use it cold directly from the package.
  • The homemade dressing is a crucial component of this salad’s flavor. Feel free to prepare it up to 5 days in advance. Store it in an airtight container or a jar in the refrigerator, and give it a good shake or whisk before using.
  • If you find yourself without red wine vinegar, don’t fret! Freshly squeezed lemon juice or apple cider vinegar make excellent substitutes, offering a similar tangy acidity to the dressing.
  • For superior flavor and texture, I always recommend buying a block of feta cheese and crumbling or cubing it yourself for this salad. While convenient, pre-crumbled feta often contains anti-caking agents that can dull its fresh taste and affect its creamy texture.
  • Beyond shaking it in a jar, you can also effortlessly whisk the dressing ingredients together in a small bowl until thoroughly combined and emulsified.
  • This versatile salad truly shines when paired with a variety of main course options. It beautifully complements robust dishes such as savory Cajun turkey, a perfectly cooked rib eye steak, flavorful smoked tri tip, or a classic honey baked ham, adding a fresh and crisp element to your meal.

Quick Tip

Maximize your efficiency by shredding your Brussels sprouts up to 2 days before you intend to assemble and serve the salad. Store them in an airtight container in the refrigerator to maintain their freshness and crispness.

Make Ahead and Storage Tips

This Brussels sprout salad is fantastic for meal prepping or preparing for a gathering, as many of its components can be made in advance. Here’s how to ensure freshness and convenience:

  • Brussels Sprouts: As mentioned, shredded Brussels sprouts can be prepared up to 2 days ahead of time. Store them in an airtight container or a zip-top bag with a paper towel inside to absorb any excess moisture, keeping them crisp.
  • Bacon: Cook and crumble the bacon several days in advance. Store the crispy bacon bits in an airtight container in the refrigerator.
  • Pomegranate Arils: If you’re deseeding a whole pomegranate, you can do this up to 3-4 days ahead and store the arils in an airtight container in the fridge.
  • Pecans: You can chop the pecans in advance and store them at room temperature in an airtight container for weeks, or in the refrigerator for longer.
  • Dressing: The dressing can be made up to 5 days ahead and stored in a jar in the refrigerator. Shake well before use.
  • Apples and Feta: It’s best to dice the apples and crumble the feta cheese just before serving to prevent the apples from browning and the feta from drying out. If you must prep apples ahead, toss them lightly with a squeeze of lemon juice to prevent oxidation.
  • Assembling the Salad: For the best texture and freshness, assemble the full salad (combine all ingredients with the dressing) just before serving. This prevents the Brussels sprouts from becoming soggy.
  • Storing Leftovers: If you have leftover dressed salad, it can be stored in an airtight container in the refrigerator for up to 1-2 days. The Brussels sprouts will soften slightly, but the flavor will still be enjoyable.

Health Benefits of Brussels Sprout Salad

Beyond its delicious taste, this Brussels Sprout Salad is a nutritional powerhouse, making it a fantastic addition to any healthy diet:

  • Brussels Sprouts: These miniature cabbages are rich in Vitamin C, promoting immune health, and Vitamin K, crucial for blood clotting and bone health. They are also an excellent source of fiber, aiding in digestion and promoting gut health. Their antioxidant content helps combat oxidative stress in the body.
  • Apples: A good source of dietary fiber and antioxidants, apples contribute to heart health and can help regulate blood sugar levels. They add natural sweetness without refined sugars.
  • Pomegranate: These ruby-red arils are packed with antioxidants, particularly punicalagins, which have potent anti-inflammatory effects. Pomegranates also provide Vitamin C and fiber.
  • Pecans: A heart-healthy nut, pecans are rich in monounsaturated fats, which can help lower bad cholesterol. They also provide fiber, protein, and essential minerals like zinc and magnesium.
  • Feta Cheese: While a source of saturated fat, feta provides calcium for bone health and a good amount of protein. Enjoyed in moderation, it adds a delicious flavor boost.
  • Olive Oil: The base of the dressing, extra virgin olive oil is known for its high content of monounsaturated fatty acids and antioxidants, contributing to heart health and overall well-being.

Together, these ingredients create a salad that is not only satisfying and flavorful but also provides a wide array of vitamins, minerals, and beneficial plant compounds.

Recipe FAQs

How do you cut Brussels sprouts for salad?

To prepare Brussels sprouts for a raw salad, start by trimming the root ends and removing any loose or damaged outer leaves. Then, cut each sprout in half lengthwise. From there, you have a few options: use a sharp chef’s knife to thinly slice the halves crosswise into fine shreds; employ a mandoline slicer for perfectly uniform, paper-thin cuts (always use a safety guard!); or use a food processor with a slicing disc for a quicker method. Some stores also offer pre-shredded Brussels sprouts in the produce aisle for added convenience.

Can you eat raw Brussels sprouts in salad?

Absolutely, raw Brussels sprouts are not only safe to eat but also delicious in salads! When eaten raw, they offer a firm, crisp texture and a slightly peppery, fresh flavor that is quite different from their cooked counterparts. The key to making them enjoyable in a salad is to thinly slice or shred them. This breaks down their fibrous structure, making them tender and pleasant to chew, allowing them to better absorb the flavors of the dressing and other ingredients.

How do I prevent apples from browning in the salad?

To keep your diced apples from browning, toss them immediately after cutting with a small amount of lemon juice, lime juice, or even pineapple juice. The acid helps to slow down the oxidation process. Alternatively, you can submerge them in a bowl of cold water with a pinch of salt for a few minutes, then drain and rinse before adding to the salad.

Can I use a different cheese instead of feta?

Yes, absolutely! The beauty of this salad is its adaptability. If feta isn’t to your liking or isn’t available, consider substituting with other crumbly or shaved cheeses like goat cheese for a tangy, creamy alternative, blue cheese for a sharper, more pungent flavor, or shaved Parmesan for a salty, nutty bite.

Flavor Variations

While this Brussels sprout salad recipe is undeniably delicious as written, it’s also incredibly versatile. Feel free to experiment with different ingredients to customize the flavors and textures to perfectly suit your preferences or what you have on hand.

  • Greens: Although this salad is specifically designed to highlight the unique texture and taste of Brussels sprouts, you can easily incorporate or substitute other hearty greens. Consider adding broccoli slaw, shredded cabbage for an extra crunch, or even a mix of robust greens to complement the sprouts.
  • Fruit: The apples and pomegranate add a wonderful sweetness and tartness. For a different fruity twist, try swapping out the crisp apples for juicy pears, or replace the jewel-toned pomegranate seeds with chewy dried cranberries for a touch of concentrated sweetness.
  • Cheese: Feta cheese provides a delightful salty and creamy element. If feta isn’t available or you’re looking for an alternative, consider using finely shaved parmesan for a nutty and sharp flavor, crumbled blue cheese for a more pungent note, or soft goat cheese for a creamy and tangy addition.
  • Protein Boost: To transform this side dish into a more substantial main course, incorporate additional protein. Slices of perfectly cooked grilled chicken breast, tender grilled turkey breast, or savory sirloin steak would all make excellent additions.
  • Toppings: Elevate the texture and flavor with alternative or additional toppings. Instead of plain pecans, try homemade candied pecans for an irresistible sweet crunch. Other fantastic nut and seed options include candied walnuts, slivered almonds, sunflower seeds, pine nuts, perfectly roasted pumpkin seeds, or vibrant pistachios.
  • Savory Focus: If you prefer a more savory profile, simply omit the fruits like pomegranate and apples. Instead, introduce thinly sliced red onion for a pungent kick and a generous sprinkle of grated parmesan cheese to enhance the umami notes.

If you’ve never ventured into the world of raw Brussels sprout salads before, this recipe is undoubtedly the perfect starting point. It offers an exquisite balance—an ideal combination of earthy undertones, salty crunch, and a burst of sweet and tangy flavors. I truly cannot get enough of it, and I’m confident you’ll feel the same!

  • 1 cup diced apple
  • 1/2 cup feta cheese crumbled or cubed
  • 1/2 cup pecans roughly chopped
  • 1/2 cup pomegranate arils
  • 1/2 cup bacon cooked and crumbled

For the dressing

  • 1 tablespoon shallot minced
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • salt and pepper to taste

Instructions

  1. Cut the ends off the Brussels sprouts then cut them in half lengthwise. Thinly slice each Brussels sprout crosswise to cut into shreds.
  2. Place the shredded Brussels sprouts in a bowl along with the apple, feta cheese, pecans, pomegranate arils and bacon.
  3. Place the shallot, olive oil, red wine vinegar, mustard, honey and salt and pepper in a jar. Shake to combine.
  4. Pour the dressing over the salad. Toss to combine, then serve.

Notes

  1. To save on prep time, you can buy pre-cooked bacon. Also, if you don’t want to take the time to pick all of the arils out of a whole pomegranate, you can buy containers of pomegranate seeds that are ready to go in your produce section.
  2. If you can’t find pomegranate seeds, substitute dried cranberries instead.
  3. I typically use Pink Lady apples in this salad. Other great options include Braeburn, Honeycrisp, Gala or Fuji apples.
