This recipe for Chile Colorado offers a deeply traditional Mexican experience, featuring succulent beef slow-cooked to perfection in a rich, vibrant red chile sauce. It’s the ultimate versatile filling, transforming ordinary burritos, enchiladas, and tacos into extraordinary culinary delights.
Mexican cuisine holds a special place in my heart, and among its many treasures, beef in a robust red sauce, known as Chile Colorado, stands out as an absolute favorite. While I used to frequent local restaurants to get my fix, I quickly discovered that crafting this flavorful dish at home is not only achievable but incredibly rewarding. Serving it alongside classic accompaniments like creamy pinto beans and fresh pico de gallo truly completes the meal, turning any dinner into a festive occasion.

My passion for Mexican food runs deep. Before the beautiful chaos of three children under seven entered our lives, my husband and I made it a weekly ritual to dine at our cherished neighborhood Mexican spot. Those days of spontaneous outings are now cherished memories, inspiring me to recreate our beloved restaurant dishes in our own kitchen. This Chile Colorado recipe is my personal homage to the version we adored, adapted to be both achievable for home cooks and incredibly versatile. It yields a richly flavored, tender meat that serves as a fantastic base for an endless array of Mexican-inspired culinary creations.
Our go-to restaurant excelled at their Chile Colorado burritos, which were always a highlight. However, at home, I prefer to present the slow-cooked beef alongside a generous spread of warm tortillas and a vibrant assortment of toppings. This interactive approach allows everyone at the table, from the pickiest eaters to the most adventurous, to customize their meal exactly to their liking, making dinner both fun and delicious.
Unveiling the Secrets of Authentic Chile Colorado
Creating this deeply satisfying Chile Colorado involves two main components: the incredibly tender beef and the rich, complex red sauce. What makes this recipe particularly appealing is that the sauce, a cornerstone of its flavor profile, is surprisingly simple to prepare. It largely relies on pantry staples, blended together to achieve a smooth, velvety consistency that truly defines this dish.
For the sauce, I lean on the robust flavors of fire-roasted tomatoes and the zesty kick of RO*TEL Tomatoes. This combination adds an incredible depth and a delightful hint of warmth that elevates the entire dish. If your family prefers a milder flavor profile, you can easily substitute the RO*TEL with a second can of fire-roasted tomatoes to maintain the rich tomato base without the added spice.

The Essential Ancho Chiles: Heart of the Red Sauce
One ingredient that you might not typically have in your pantry but is absolutely crucial for an authentic Chile Colorado is dried ancho chiles. These beautiful, dark red chiles are readily available in the spice aisle or the ethnic food section of most grocery stores. Despite their appearance, ancho chiles are not spicy; rather, they impart a wonderfully smoky, earthy, and slightly fruity flavor that is fundamental to the “colorado” (red) sauce. When rehydrated and blended with the tomatoes and other aromatics, they create a smooth, bold sauce that beautifully complements the slow-cooked beef.

Building Flavor: Aromatics and Broth
Beyond the chiles and tomatoes, the sauce is further enriched with common kitchen staples: aromatic garlic, pungent onions, classic Mexican spices like cumin and oregano, and savory chicken or beef broth. Onions, in particular, have always been a source of culinary frustration for me, often leading to a torrent of tears. However, a brilliant kitchen hack has changed my chopping experience forever: simply place your onion in the freezer for about 15 minutes before cutting it. The cold effectively inhibits the release of the tear-inducing chemicals, making onion prep a breeze!
Achieving Melt-in-Your-Mouth Tenderness
The secret to truly outstanding Chile Colorado lies in the slow cooking of the beef. Whether you choose to braise it in the oven or let your slow cooker do the work, allowing the meat to simmer for several hours is essential. This extended cooking time breaks down the connective tissues in the beef, resulting in incredibly tender, melt-in-your-mouth morsels that are saturated with the rich red chile sauce. I’ve included detailed instructions for both oven and slow cooker methods, ensuring you can prepare this dish no matter your preference or schedule.
One of the best aspects of this recipe is that it’s designed to make a double batch. This smart meal prep strategy means you can enjoy half for a delicious dinner the night you prepare it, and easily freeze the remainder for a quick and convenient meal on another busy evening. It’s a fantastic way to savor homemade Mexican flavors without having to cook from scratch every time.

Crafting Your Perfect Chile Colorado Meal
Once your Chile Colorado has slow-cooked to perfection, the real fun begins: assembling a vibrant fixings bar. This approach encourages everyone to become a culinary artist, creating their ideal meal. I love to offer a diverse selection of tortillas – both soft corn and flour – alongside fluffy Mexican rice and hearty pinto beans. For fresh contrasts, I include thinly sliced radishes, crumbled cotija cheese, tangy lime wedges, fragrant chopped cilantro, and creamy avocado slices. A dollop of sour cream or crema fresca can add a cooling, rich finish.

Preparing a Mexican feast, especially for a family, can be simplified greatly by relying on readily available ingredients like canned tomatoes and by embracing the “cook once, eat twice” philosophy. This strategy, where you make a double batch of delicious Chile Colorado, ensures you have a fantastic homemade meal ready for busy weeknights, making Mexican night easier and more enjoyable than ever before!

Pin Recipe

Ingredients
- For the sauce:
- 1 teaspoon of olive or vegetable oil
- 1 small white onion finely chopped
- 2 cloves of garlic minced
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- 3 whole dried ancho chiles
- 1 14.5-ounce can of Hunt’s Fire Roasted Tomatoes undrained
- 1 10-ounce can of RO*TEL Tomatoes undrained (if you don’t like spice, you can use a second can of the Hunt’s Fire Roasted Tomatoes instead)
- 1 cup of chicken or beef broth
- salt and pepper to taste
- For the meat:
- 2 teaspoons of olive or vegetable oil
- 3 1/2 pounds beef chuck roast or stew meat cut into 1 and 1/2 inch cubes
- salt and pepper to taste
- For serving:
- Corn or flour tortillas, Sliced avocado, chopped cilantro, lime wedges, cotija cheese, sliced radishes, sour cream
Instructions
- For the sauce:
- Place the chiles in a bowl and pour boiling water over them to cover. Let sit for 10 minutes to rehydrate.
- While the chiles are soaking, heat the olive or vegetable oil in a large pot over medium heat. Add the finely chopped onion and cook for 4-6 minutes, stirring occasionally, until it has softened and become translucent. Add the minced garlic and cook for 1 minute more, stirring constantly to prevent burning. Incorporate the cumin, dried oregano, Hunt’s Fire Roasted Tomatoes, RO*TEL tomatoes (or additional fire-roasted tomatoes for less spice), and chicken or beef broth into the pot. Increase the heat slightly to bring the mixture to a gentle simmer, then reduce heat and cook for 10 minutes, allowing the flavors to meld.
- Carefully take the rehydrated chiles out of the hot water. Cut them in half lengthwise and remove the seeds and stems.
- Transfer the prepared chiles into a blender along with the simmered tomato mixture from the pot. Blend until the sauce is completely smooth and free of any chile or tomato chunks. Taste the sauce and season it generously with salt and pepper as needed to achieve your desired flavor.
- For the meat: Preheat your oven to 325 degrees Fahrenheit (160 degrees Celsius). Heat the oil in a large, oven-safe pot or Dutch oven over medium-high heat. Season the beef chuck roast or stew meat cubes liberally with salt and pepper. Place the seasoned meat into the hot pot in a single layer, ensuring not to overcrowd the pan. Cook for 4-6 minutes, or until deeply browned on all sides. You may need to work in batches to achieve proper browning without steaming the meat. Once all the meat is browned, return it all to the pot and pour the prepared red chile sauce evenly over the top. Cover the pot tightly with a lid or aluminum foil and transfer it to the preheated oven. Bake for 3 hours, or until the beef is incredibly tender and easily shreds with a fork.
- SLOW COOKER INSTRUCTIONS: Prepare the sauce as directed in steps 1-4. Season the beef cubes with salt and pepper and place them in the basin of your slow cooker. Pour the smooth chile colorado sauce over the seasoned meat, ensuring it’s well covered. Cook on high for 3-4 hours, or on low for 6-8 hours, until the beef is exquisitely tender.
- Serve the tender Chile Colorado beef hot, accompanied by a selection of warm corn or flour tortillas, Mexican rice, pinto beans, fresh chopped cilantro, crumbled cotija cheese, zesty lime wedges, crisp sliced radishes, and a dollop of cooling sour cream or Mexican crema.
