  4. Cover the pot tightly and turn the heat down to low. Simmer for 15 minutes or until rice is tender and the liquid is absorbed. Do not lift the lid.
  5. Stir the drained and rinsed black beans into the rice. Cover the pot and let it sit off the heat for 3-5 minutes or until beans are warmed through.
  6. Stir in the fresh lime juice and chopped cilantro. Fluff the rice with a fork. Taste and add more salt and pepper if desired.
